MEET THE CHEF
David de Quay
Chef David found his passion for the culinary arts at an early age, helping his Grandmother cook during visits to Holland. He groomed a long and steady career graduating with a BA from Michigan State University’s School of Hotel and Restaurant Management, and Chicago’s French Pastry School in later years.
An extensive apprenticeship at the famed Greenbrier Resort began his professional training, working every culinary position, in many excellent kitchens, including Ritz-Carlton Hotels, The Peabody, Gordon Restaurant, Rhapsody Restaurant, The University Club of Chicago, and as Executive Chef at Hinsdale Golf Club for 12 years.
David’s calling came full circle as Chef/Owner of de Quay Restaurant, an acclaimed, unique Dutch/Indonesian concept in Chicago in 2014. Assisting the Front of the House team in the re-opening of Oriole, a two Michelin Star Restaurant in 2021, he compliments his culinary expertise with experience at the highest level in the art of serving.
